Happy weekend. It’s a hot, hot friday here in LA and cooking just doesn’t feel right today. But, making these Cherry Peach Sangria Popsicles sure does. After all, there’s no cooking or heating up the kitchen involved, just a quick blitz of the blender and you’re on your way to happy hour any time you want for the rest of the weekend.
Sorry kids, this recipe’s not for you. It doesn’t happen often, but when I was making these and Mr. T realized he wasn’t going to be able to partake in the enjoying of this frozen delight, he was not too happy. Don’t feel bad, there’s no shortage of some kind of treat or another for these monkeys. And every once in a while, it’s nice to make something to make the big kids happy, right??
So, on to the deets of these more sophisticated of frozen pops. Though snazzy as they may be, there’s nothing too fussy about how they are made. In fact, they couldn’t be easier. You take a cup of red wine, nothing too fancy or expensive, and blend it with some frozen cherries and honey. Then stir it with another cup of red wine, a little orange and lemon juice and pour it into the popsicle mold. Then some sliced peaches and quartered cherry slivers get thrown in for the classic sangria style. Once frozen, pop them out and enjoy. I’m telling you, aside from the bit of waiting for them to freeze, they’re one of the fastest things I’ve made in a while.
So, check those cabinets and see what kind of red wine you’ve got and find whatever fruit you have on hand. I love the cherry peach combo, but don’t fret if you don’t have any, use what you have and whip up some of these fun, grown-up pops. Have a great weekend, and as always give me a shout here or on Insta if you make these.
Cherry Peach Sangria Popsicles
Ingredients
- 2 cups red wine, divided (I used cabernet sauvignon)
- 3/4 cup frozen cherries
- 3 tbsps honey
- 1/4 cup orange juice
- 1 tbsp fresh lemon juice
- 1/4 cup cherries, pitted & quartered
- 1/2 fresh peach, peeled & sliced thin
Instructions
-
Add one cup of the red wine, the frozen cherries and the honey to a blender and blend until almost smooth. Transfer to a large measuring cup. Stir in the other cup of wine and the orange and lemon juice. Taste for sweetness and adjust if desired.
-
Add a few peach slices and a couple cherry quarters alternating between each to the popsicle molds. Then fill each mold with the sangria mixture. Place in the freezer and freeze for about 45 minutes. Then put the top on and insert the popsicle sticks about 3/4's of the way down and freeze for about another 3 hours until solid. Unmold and enjoy!
Recipe Notes
*An inexpensive wine is great for this, nothing fancy is needed.
*Change up the fruit to what you prefer or have on hand.
*Maple syrup or sugar can be subbed for the honey.
