Happy National S’mores Day! Could there be a better holiday? Okay, there maybe others just as fabulous. But summer really is the perfect time to honor this timeless treasure isn’t it? While I can’t pinpoint my first s’more eating experience, I can rememer countless summer nights growing up that were spent by the campfire roasting marsmallows, and smushing it between some Hershey’s chocolate and graham cracker squares and biting into one of the best creations ever. The. Best. It’s definitely plays a big part in so many of my favorite family memories. We did a lot of camping.

Is there any fruit that screams summer more than watermelon? For me, it’s absolutely the fruit of the season. I look forward to it all year long and can’t get enough of it once the first ripe and sweet melons arrive at the markets. It’s so refreshing and hits the spot on a sweltering hot day. I remember when I was pregnant with Mr. T during the hot summer months and all I could stand to eat much of the time was watermelon. It’s no surprise, now he really loves it too.
And while it is so perfect just as is, eaten from a giant wedge or cut up into chunks, it’s also the star ingredient in some of my favorite recipes. This Turkish Watermelon & Feta Salad and Watermelon-Mint Agua Fresca are a few examples. And today I want to share another one I think couldn’t be more perfect for today, National Watermelon Day. These Watermelon Popsicles are fabulous. And super cute and lots of fun for the kids. Saying happy 4th of July with this Frozen Strawberry Lemonade Pie never tasted so sweet. And with all going on in this crazy world today, that’s saying a lot. But this deserves all the praise it gets. It’s easy to throw together. No making or rolling pie crust. Check. It uses the best of the season, gorgeous summer strawberries. And is nice and chilled for these hot summer days. And and there are two popular summer treat bonuses in here, the combo of lemonade and pretzels. Yup, you read right. I threw some pretzels in the crust just for fun and because why not. And the filling takes on notes of fresh strawberry lemonade with a big kick of fresh lemon zest and juice. This is good. really good. My husband had two servings good. (He’s a chocolate or nothing guy.)
