Healthy Apple Cinnamon Muffins with Walnut Streusel

It’s been a minute since I’ve been able to post on here. Happy New Year. I hope the holidays treated you well. I was kept pretty busy with orders and getting on here just didn’t happen. And January has started off just as busy in the baking department. Not complaining at all. (We’re still home 24/7 so not much has changed there.) But there have been plenty of distractions. I hope you have found some fun things to keep busy at home too. I’m excited to share today’s recipe with you and have lot’s more in store for the days and months ahead. Here’s to a sweeter 2021.

If you follow along on Instagram, then you already know how I feel about these muffins and how having a batch of these in the kitchen really does make the week so much better. And in case you’re not on Insta, well, you probably get the point. These Healthy Apple Cinnamon Muffins with Walnut Streusel are so delicious. And what’s better than that? They’re made with whole wheat flour and are refined sugar-free, (minus a little brown sugar in the streusel topping. That part is optional, but so so good.)

Healthy Banana Muffins

When you have browning bananas on your hands, what’s your go-to recipe? Classic banana bread, healthy banana bread, muffins, bars? The options are endless aren’t they. Bananas are such an awesomely versatile fruit that lend great sweetness and moisture to baked goods. And while I love making my classic banana bread and lots of other treats like this Perfect Banana, Coconut & Hazelnut Cake with Creamy Nutella Frosting or The Best Zucchini Banana Bread with Chocolate Chips, I especially adore these quick and easy muffins that are delicious, nutritious and so great to have on hand.

With these in the kitchen, a quick breakfast or in-between work or study snack is always at the ready. The kids love them and I love that they are sweetened with nothing more than overripe bananas and a little maple syrup and include other great ingredients like whole wheat flour and ground flax seeds.

Pumpkin Sourdough Bread with Cranberries & Pepitas

Who’s jumped on the sourdough bandwagon? I’ve definitely been bitten by the bug and have gotten back into a lot more bread baking during the pandemic. And if you’ve seen some of the previous posts, when it came to sourdough, I was more in favor of getting in on the trend if not for the sole reason of having the discard to use for fabulous recipes like these crackers.

Well that might not be the case any more. Not now that I’ve been using my wonderfully ripe and active starter to turn out boule after boule of this Pumpkin Sourdough Bread with Cranberries & Pepitas. One slice of this, toasted up with a little butter, and many if not all of your worries will disappear, even if only for a moment. It’s so delicious and is a true fall treat for the sweet and savory lovers alike. There’s also not much to not love about it’s adorable shape.

Fig & Rosemary Sourdough Crackers

I have been making these Fig & Rosemary Sourdough Crackers on repeat for a couple months now. And I think it’s time to just admit the truth. These might be more for me than for the kids. I kept saying I make them for the littles but who am I kidding. Yes, having quick and easy wholesome snacks on hand for those in between online class “I’m starving” moments has been key to survival these days. But while I like to think that I keep making these crackers to satisfy that need, while it is partially true, I might be the one enjoying them most. They are so good. And addicting. And having them in a little glass jar on the counter may or may not be a good thing.

Soft Pumpkin Pretzels with Spiced Maple Mustard

Why are soft pretzels so good? I love them. My kids love them. And anyone I’ve shared them with, goes nuts for them too. I’m guessing you might feel the same. They’re just so pillow-y soft and very hard to resist, right?! Well, these Soft Pumpkin Pretzels with Spiced Maple Mustard are no exception at all. In fact, for me they’re even more irrisistable with the addition of the pumpkin and warm fall flavors. And their deep golden color is gorgeous too.
