Cinnamon Harvest Granola

Ingredients

  • 3 cups (270g) old-fashioned oats
  • 3/4 cup (98g) pecans, chopped
  • 1/2 cup (75g) whole almonds
  • 1/2 cup (65g) pumpkin seeds
  • 2 tbsps whole flax seeds
  • 2 tbsps hemp seeds
  • 2 tbsp chia seeds
  • 1 tbsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • pinch ground cloves
  • 1/4 cup + 2 tbsps (127g) maple syrup
  • 1/4 cup olive oil (coconut oil is great here too)
  • 1/2 cup dried cranberries

Instructions

  1. Preheat the oven to 140C/ 275F. Line a large sheet pan with parchment paper or a silicon baking mat.
  2. In a large bowl add all of the dry ingredients, ending with the ground cloves. Stir well to combine.

  3. Add the maple syrup and olive oil to the oats mixture and use a spatula to mix until everything is well combined and evenly coated.

  4. Spread it out evenly onto the prepped baking sheet.

  5. Bake for 30-35 minutes, rotating the pan and gently tossing and re-spreading the oats halfway through baking.

  6. Remove from the oven and sprinkle the 1/2 cup of dried cranberries on top. Allow to cool at room temperature completely, toss to combine the cranberries then store in an airtight container or jar. Enjoy!

Recipe Notes

*Stores in an airtight container for up to two weeks.

*Ground flax seeds can be subbed for the whole flax seeds if needed.

*Once you remove the granola from the oven and sprinkle the cranberries on top, don't stir it.  You'll have a few yummy clusters stuck together if you wait until it's cooled to gently stir/ store.
