Bring a large pot of water to a boil. (Enough for the ramen and broccoli.)
Meanwhile, in a small bowl, mix all the sauce ingredients until well incorporated.
Once the water is boiling, add the ramen and cook according to package directions. Be sure though, to only cook to al dente, probably a minute less than the package states. When the noodles have 2 minutes left, add the chopped broccoli to the boiling ramen.
Then while the noodles are cooking, add the sauce to a large saute pan over medium heat. Bring the sauce to a boil, add the julienned carrots and bell peppers, then turn the heat down and simmer for a minute or so. Once the noodles are done, drain them along with the broccoli and add to the sauce.
Toss the noodles gently with the sauce and veggies (I like to use tongs) and cook over medium heat until the noodles have absorbed some of the sauce and the sauce thickens slightly. Season if needed, sprinkle with a little more red pepper flakes, scallions and sesame seeds and enjoy!
