Coconut Cashew Granola

I am really excited to share this orange scented Coconut Cashew Granola with you today. We’ve been enjoying it so much for breakfast, an anytime snack and sometimes for dessert with a few mini chocolate chips thrown in. It’s slightly sweet, perfectly crisp, nutty in just the right amount and delicately scented with bright citrus-y notes. And if all that wasn’t tempting enough, the good-for-you factor should seal the deal. Now let’s talk about how to make this insanely delicious recipe…..

I love making granola. It’s so fast and easy and I really feel like there’s something so beautiful about a jar of homemade granola sitting on the counter adding a gourmet cafe feel to your kitchen. I usually have this very thing on my counter in something like this, right next to a jar of some handmade crackers. The kids love both and enjoy having easy access to a healthy, wholesome breakfast or snack when they want. Which is pretty cool now that one of my munchkins is becoming a little more independent and gets a big confidence boost about being able to serve himself and his little sis a bowl of cereal all by himself. He even handles the glass milk bottle all on his own. That one makes me nervous, but so far so good.

If you’ve tried my Everyday Maple Almond Granola and enjoy it, I think you’ll love this. It’s equally as simple to make. Mix the ingredients in a large bowl, pour onto a sheet tray and bake for about 25 minutes.

This one is also only barely sweetened with a little honey or maple syrup and has a touch of brown sugar which helps the orange zest get nicely mixed in. Some coconut oil adds to the heavenly, but not overpowering coconut flavor in this, and the combo of coconut flakes with shredded coconut gives it such a nice extra-light crisp. I’ve added some of my usual power go-to’s like flax seeds and hemp seeds for the protein, fiber, healthy fats, and other nutritional benefits they add. And then the cashews and almonds give it that delicious nutty flavor and crunch. This is such a yummy and satisfying treat you can enjoy anytime of day and feel good about.

Coconut Cashew Granola

This Coconut Cashew Granola is slightly sweet, perfectly crisp, nutty in just the right amount and delicately scented with bright citrus-y notes. And if all that wasn't tempting enough, the good-for-you factor is the cherry on top.

Ingredients

  • 3 cups (270g) old-fashioned oats
  • 1 cup (140g) cashews
  • 1 cup (100g) shredded, unsweetened coconut (I like to use a combo of flaked and shredded coconut)
  • 1/2 cup (55g) sliced almonds
  • 2 tbsps whole flax seeds
  • 2 tbsps hemp seeds
  • zest from 1 orange (about 2-3 tsps)
  • 1 tbsp brown sugar
  • 1/2 tsp kosher salt
  • 1/4 cup (85g) maple syrup or honey
  • 1/4 cup (53g) coconut oil, melted

Instructions

  1. Preheat the oven to 140C/ 275F. Line a large sheet pan with parchment paper or a silicon baking mat.

  2. In a large bowl, add the brown sugar and orange zest and rub the two together with your fingers for a couple minutes so the zest can release some of it's oils and becomes even more frangrant. Then combine the rest of the dry ingredients, up through the salt, with the zested sugar.

  3. In a small saucepan melt the maple syrup together with the coconut oil until nice and syrupy.

  4. Add the melted syrup to the oats and mix until all is well combined and coated.

  5. Spread the oat mixture evenly onto the baking sheet lined with parchment paper.

  6. Bake for 25-30 minutes, rotating the pan and gently tossing and re-spreading the oats halfway through baking.

  7. Allow to cool at room temperature completely before storing in an airtight container or jar. Enjoy!

*Stores in an airtight container for up to two weeks.

*For a little texture contrast and because it looks pretty, I like to use a combo (about 1/2 and 1/2) of both flaked and shredded coconut.
