Healthy Apple Cinnamon Muffins with Walnut Streusel

It’s been a minute since I’ve been able to post on here. Happy New Year. I hope the holidays treated you well. I was kept pretty busy with orders and getting on here just didn’t happen. And January has started off just as busy in the baking department. Not complaining at all. (We’re still home 24/7 so not much has changed there.) But there have been plenty of distractions. I hope you have found some fun things to keep busy at home too. I’m excited to share today’s recipe with you and have lot’s more in store for the days and months ahead. Here’s to a sweeter 2021.

If you follow along on Instagram, then you already know how I feel about these muffins and how having a batch of these in the kitchen really does make the week so much better. And in case you’re not on Insta, well, you probably get the point. These Healthy Apple Cinnamon Muffins with Walnut Streusel are so delicious. And what’s better than that? They’re made with whole wheat flour and are refined sugar-free, (minus a little brown sugar in the streusel topping. That part is optional, but so so good.)

Healthy Banana Muffins

When you have browning bananas on your hands, what’s your go-to recipe? Classic banana bread, healthy banana bread, muffins, bars? The options are endless aren’t they. Bananas are such an awesomely versatile fruit that lend great sweetness and moisture to baked goods. And while I love making my classic banana bread and lots of other treats like this Perfect Banana, Coconut & Hazelnut Cake with Creamy Nutella Frosting or The Best Zucchini Banana Bread with Chocolate Chips, I especially adore these quick and easy muffins that are delicious, nutritious and so great to have on hand.

With these in the kitchen, a quick breakfast or in-between work or study snack is always at the ready. The kids love them and I love that they are sweetened with nothing more than overripe bananas and a little maple syrup and include other great ingredients like whole wheat flour and ground flax seeds.

Sometimes you just need to start the week off with something a little indulgent.  And all the better if it’s warm and cozied up with all the fall flavors.  This Pumpkin Pie Overnight Baked French Toast fits the ticket and is exactly how we’re kicking off after one heck of a past week.  

And it’s a good thing this makes a nice big dish of deliciousness because having a 2-in-1 meal ready to cover a couple mornings is exactly what this mama needs right now. Plus this really is simply divine. And is that hug we could all use, reminiscent of past holiday season mornings spent in jammies by the fire, with twinkle lights amidst.

Happy first official day of fall. Autumn is my absolute favorite season. Crisp air (not so much at the moment in LA,) colorful falling leaves, the season of every cozy recipe possible, wafts of cinnamon and spice running through the air and all things pumpkin and apple. Is there anything better?

Aside from the falling leaves, today’s recipe checks all the above boxes. This Pumpkin Apple Bread with Cinnamon Pecan Streusel is everything that is wonderful about fall, baked into one delicious loaf.
