Sheet Pan Chicken Fajitas

Don’t you just love fajitas? I do. Chicken, steak, shrimp, I’ll take them any which way really. You know that sizzling, smoking hot pan that comes out when you order them at Tex-Mex restaurants? It’s pretty hard to resist. Especially when it comes with all the fixings like soft & warm tortillas, fresh avocado, beans, sour cream, the works. Yep, I’m a sucker for the fixings almost as much as I am for the main dish. It all goes together so well.

And while restaurant-style is pretty amazing, I’m happy to say these Sheet Pan Chicken Fajitas absolutely do the trick when the craving strikes. And as the name suggests, it’s all (mostly) done in one pan, in the oven which means no slaving over a hot stove. Just a little time in a homemade marinade and you’ve got really fabulous flavor infused in the classic chicken, peppers and onion combo. You can opt to just slice up some fresh limes and avocado, throw on a little cilantro and wrap it all up in a tortilla or include some sides like corn, beans or rice. Or even take the hot mixture right out of the oven and top it over a quick salad. Homemade dinner perfection. And healthy to boot.

Watermelon Popsicles

Is there any fruit that screams summer more than watermelon? For me, it’s absolutely the fruit of the season. I look forward to it all year long and can’t get enough of it once the first ripe and sweet melons arrive at the markets. It’s so refreshing and hits the spot on a sweltering hot day. I remember when I was pregnant with Mr. T during the hot summer months and all I could stand to eat much of the time was watermelon. It’s no surprise, now he really loves it too.

And while it is so perfect just as is, eaten from a giant wedge or cut up into chunks, it’s also the star ingredient in some of my favorite recipes. This Turkish Watermelon & Feta Salad and Watermelon-Mint Agua Fresca are a few examples. And today I want to share another one I think couldn’t be more perfect for today, National Watermelon Day. These Watermelon Popsicles are fabulous. And super cute and lots of fun for the kids. They truly let the natural flavor of the fruit shine with the most minimal of additions and have cool layers to make them look just like the real thing. But all while being super easy to make.

We’re just about to the middle of the week and I say we’ve earned a little treat. (And I just couldn’t wait any longer to share these.) You might be saying “huh” to the title of this post. But stick with me. These Coconut Lime & Poppyseed Macaroons might sound like they have a lot going on but I assure you, they will knock your socks off. Even the socks of the biggest coco mac purist. And if it’s too dang hot and you’re not wearing socks, you’ll still find yourself really smitten with these. The lime flavor is so bright and tropical you’ll feel like you’ve been whisked away on a delicious island getaway. And the slight pop of texture from poppy seeds really takes the classic coconut treat to the next level. I dare you not to like them.

Easy Salted Peanut Caramel Sundaes

We’ve made it to Friday and the start of another weekend. Another covid weekend in particular, which is pretty different for us (and most I imagine,) than a typical summer Saturday or Sunday spent out and about with friends and family. But, as long as we have tasty frozen desserts to keep us smiling and cool, we’re ok passing the time a bit more quietly at home. These Easy Salted Peanut Caramel Sundaes do the trick perfectly. And their minimal hands-on effort (read mostly store-bought components) and no baking required is just what this mama needs sometimes.
