Roasted Sweet Potato, Kale & Quinoa Salad with Maple Tahini Dressing

Thanksgiving week is here. Doesn’t quite have the same feel as those before, right? But I think we’re all still trekking on one way or another and hopefully getting ready for some yummy eats, if you plan to celebrate. And even if you don’t or perhaps don’t have your menu finalized, today’s recipe is one fab salad that really is holiday worthy or just plain fantastic for any day, especially one this time of year.

This Roasted Sweet Potato, Kale & Quinoa Salad with Maple Tahini Dressing has it all. Sweet from the fork-tender sweet potatoes, pomegranate and cranberries, a slight tang from the deliciously pickled onions, crunch from the pumpkin seeds, a salty bite from the feta and a pop of fresh from the parsley and mint. Then the dressing, well, it’s just eat-right-from-the-spoon good is all I need to say. And the kale and quinoa, while they bring it all together, all add one heck of a power punch making this a nutrient-rich side to your feast or a perfect main dish all on it’s own.

Pumpkin Sourdough Bread with Cranberries & Pepitas

Who’s jumped on the sourdough bandwagon? I’ve definitely been bitten by the bug and have gotten back into a lot more bread baking during the pandemic. And if you’ve seen some of the previous posts, when it came to sourdough, I was more in favor of getting in on the trend if not for the sole reason of having the discard to use for fabulous recipes like these crackers.

Well that might not be the case any more. Not now that I’ve been using my wonderfully ripe and active starter to turn out boule after boule of this Pumpkin Sourdough Bread with Cranberries & Pepitas. One slice of this, toasted up with a little butter, and many if not all of your worries will disappear, even if only for a moment. It’s so delicious and is a true fall treat for the sweet and savory lovers alike. There’s also not much to not love about it’s adorable shape.

Easy Whole Wheat Mediterranean Flatbread

While everyone is on a bit of a homemade bread making kick, I think it’s only fitting to share my favorite recipe for Easy Whole Wheat Mediterranean Flatbread. These are pillow-soft and tender and really delicious. And they make a fabulous accompaniment to dip into soup or stew and are the best wraps for falafel, chicken kebabs, you name it. And the best part, they don’t take much time at all. We’re talking about 45 minutes from start to finish. But trust me, they’ll taste better than any flatbread you can find at the store.

Grilled Peach, Chicken & Basil Summer Salad

The weekend is here and whether you’ll be doing some grilling indoors or out, I think making this Grilled Peach, Chicken & Basil Summer salad most definitely needs to be on the agenda. It’s wow-o-wow good. We’ve got a little less than a month left of summer and thus the gorgeous in-season peaches won’t be around for too much longer. So you can count on me to be making this on repeat until that last juicy, stone fruit goes bye-bye. And I recommend you do the same. Need one more little nudge? My twin bro’s exact words were, “10 stars…off scale perfection” when I recently made it for him.
