Blueberry Orange Bonus Smoothie

Ready to start your week off on a healthy note? This smoothie should do the trick. Not only does it taste delicious, but has two big bonuses. The beautiful purple shade is hard to resist and definitely resembles more of a treat than something healthy. And what the color doesn’t show, is the hefty amount of ripe summer squash included in this. That means a nice serving of veggies to start the day on the right foot and the munchkins are none the wiser. Big plus for sure, right?

Most of the smoothies I make for the kids are green. I figure if I’m going to make a smoothie, then I’m definitely using that opportunity to get in some power ingredients like spinach or kale, which let’s face it, my littles aren’t begging to eat, or like one of them, downright refuses. Well lucky for me, she doesn’t have a problem with smoothies that happen to be the same color as spinach or kale. So that’s why I (or should I say they) consider this one a bonus. Their faces light up at the sight of a purple or pink (the most begged for) smoothie. Because they think it’s such a treat. Yep, something loaded with good-for-you zucchini can be a treat. Love that.

The ingredients in this like the oranges, blueberries and banana really do the trick to sweeten it up without needing any added sugar. Over-ripe frozen bananas are key to yummy and creamy smoothies. And the blueberries and oranges should be nice and sweet too. If they aren’t you can add a tiny bit of honey if necessary. The Greek yogurt adds to the creaminess and gives some protein, but you can substitute with Kefir, almond milk or whatever you have on hand. And the hemp seeds add a nice little dose of healthy fats, protein and amino acids. Yes please.

You can customize as necessary to include what you have on hand or leave out what you don’t like. That’s really the beauty of smoothies isn’t it? But definitely give this a try, your body and those you choose to share it with will thank you.

Ingredients

  • 2 oranges, peeled, segmented & seeded (I like to freeze mine)
  • 1 cup frozen blueberries
  • 1 banana, peeled, sliced & frozen
  • 2 medium fresh zucchini, stemmed & chopped
  • 1/2 cup Greek-style yogurt
  • 2 tbsps hemp seeds
  • 1/4-1/2 cup almond milk

Instructions

  1. Add all of the ingredients to a high-powered blender and blend until smooth. Scrape down the sides as needed and add a bit more almond milk if it's too thick. Taste for sweetness and add a bit of honey only if it needs it. Pour into 4 glasses (or 2 large glasses) & enjoy!

Recipe Notes

*I like to freeze the orange pieces, but you can skip that if you desire.  If you do freeze them, make sure to remove all the seeds as a blended seed can make the smoothie bitter.

*Over-ripe bananas are the best to freeze for smoothies.  They make them extra sweet.

*To make this vegan, you can omit the yogurt and include more almond milk or milk substitute of choice.
